Today is my 9th wedding anniversary. It’s only fitting that I’m posting a chocolate recipe since my husband is the biggest chocolate lover you will meet. I’ll get to the recipe, but first, let’s talk about marriage. Since I’ve been married almost a decade I’m basically an expert on the subject, don’t you think? I’m kidding. Did my sarcasm come through there?

No, I don’t think I’m anywhere near an expert on the subject of marriage, but after nine years, I’ve learned that the most common myths out there aren’t true. When you get engaged, you spend the next year-ish planning your wedding and listening to everyone’s idea of what marriage is all about. After being married for a while, you can look back and realize some of it is true, and some of it, well, isn’t totally accurate.

You’ve heard of two truths and a lie, right? Let’s reverse it to two lies and a truth. See if you can guess which of these are the marriage lies and which one is the truth.

#1: The first year of marriage is the hardest.
#2: Marriage is a lot of work.
#3: Marriage is all about compromise.

#1-False. We basked in that newlywed feeling the whole first year. The hardest year of marriage? The first year after you have your first child. It rocks your married world.

#2-Work? When I think of work, I think of scrubbing toilets. Effort is probably the more accurate term. Yes, marriage is effort. But if you marry the right person, I don’t think it feels like work. My marriage doesn’t feel like a job. Sure, life can be hard, but the beauty of marriage is that I get to go through those hard times with my best friend.

#3-Ding ding ding! This is one thing you hear about marriage that is true. Marriage is full of compromise. Yes, yes, yes.

Strangely enough, the one area we’ve had to compromise the most is food. He gets his chocolate fix in the form of Clean Eating Raw Brownie Bites and I buy him cereal for breakfast because that’s what he wants. Compromise.

Unfortunately, when Daddy is eating cereal for breakfast, that means Luke wants cereal for breakfast. I figured if Luke was going to have cereal for breakfast, it better be the best cereal I could find. When I saw this One Degree Organic Vegan Sprouted Brown Rice Crisps Cereal with only 4 ingredients, I thought it was perfect. Until it sat in the pantry for months because Luke wanted Daddy’s cereal (Honey Nut Cheerios), not Mommy’s healthy cereal. We’re currently re-looking at this compromise.

The good news is that because Luke didn’t want the healthy rice crisps cereal, I created this healthier rice crispy treat recipe. With chocolate. Chocolate>marshmallows. Right? Right. That’s something Tim and I don’t have to compromise on.

These Healthy Chocolate Rice Crispy Treats could not be easier. Mix together your melted chocolate, nut butter, and honey, stir in the cereal, and press them into the pan. And they are a delicious, healthy treat that everyone loves. If you need a quick dessert that the kids and adults will all enjoy, this is a great option.

Description

These Healthy Chocolate Rice Crispy Treats could not be easier.

Ingredients

Scale

1/2 cup bittersweet chocolate chips (mine were 60% cacoa), melted

3/4 cup almond butter (or nut/seed butter of choice)

1/2 cup honey

4 cups rice crispy cereal (preferably brown rice)

Instructions

Line an 8X8 inch pan with parchment paper. In a large bowl, mix together the melted chocolate, almond butter, and honey. Stir in the cereal and mix well. Using a rubber spatula, press the mixture into the pan. Press it down firmly. Put the pan into the freezer for at least 20 minutes. When the bars are firm, pull the parchment paper out of the pan and cut into 16 squares. Store in the refrigerator. Enjoy!
