Mini Keto Snickerdoodle Cookie Cereal Ingredients
1 1/2 cup almond flour
1/4 cup coconut flour
2 teaspoons cinnamon
1/4 teaspoon cream of tartar
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1/2 cup sugar free sweetener
1 teaspoon vanilla

Preheat
Preheat the oven to 350 degrees.

Sift ingredients
Sift together almond flour, coconut flour, cinnamon, cream of tartar and salt in a small bowl. Set aside.

Get a medium bowl
In a medium bowl, cream together butter, monkfruit sweetener, and vanilla extract.

Stir in the dry
Slowly stir in dry ingredients and mix until fully combined.

Cool the dough
Refrigerate dough for 30 minutes. This allows flavors to meld together and prevent the butter from spreading while baking.

Make small balls
Pinch off a small ball of snickerdoodle cookie dough about the size of a large marble and roll into a ball. Place on a parchment lined baking tray and press down to form a cookie shape. Repeat with remaining dough, spacing around a ¼ inch apart.

It reminds me of the childhood favorite cereal Cookie Crisp – except our cookie cereal is sugar-free and tastes like a snickerdoodle cookie instead of a chocolate chip.
Of course, these snickerdoodle cookies can be nibbled on without an topping – just by themselves. They make a fun treat to pack in a kid’s lunchbox or give as an afternoon snack.
Another way to use this mini keto cookie cereal is to add them to a few scoops of low carb ice cream!
Substitutions
When it comes to keto baking, I understand that everyone has different ingredients on hand or different preferences in keto flours and sweeteners. Keto ingredients can be expensive so you may not want to invest in more odd ball keto foods if you don’t have to. I have laid out some substitutions that you can use in this recipe for mini keto snickerdoodle cookie cereal.
Keto flours
My favorite keto flours to use when baking is a combination of almond flour and coconut flour. Using the combination creates a very close resemblance to flour when baking. The texture, color and density are very similar to all-purpose flour.
If you have nut allergy and can’t use almond flour, try using sunflower seed flour to make this mini keto snickerdoodle cookie cereal. Sunflower seed flour is nut free and it has a similar consistency to almond flour. It will measure cup for cup to almond flour so it is a direct substitute for almond flour in this keto cookie cereal recipe.
Cream of tartar
Cream of tartar is added to snickerdoodle cookies to give that slight tangy flavor signature of the buttery, cinnamon cookie. In this recipe for mini keto snickerdoodle cereal, the cream of tartar is added only for taste. It will help the cookies rise slightly too.
The cream of tartar is not an essential ingredient in this keto cookie recipe, so if you don’t have it, then leave it out.
Keto milk options
There are several keto approved milks you can use as a replacement for regular milk for your keto cereal. Regular milk is higher in carbohydrates so it’s generally not recommended. Even whole milk has 12 grams of net carbs in one cup.
Some more keto friendly options to use for this keto cookie cereal are heavy cream and nut milks. The nut milks I recommend are macadamia nut milk, almond milk, hemp milk and coconut milk. Make sure they are all unsweetened. The sweetened varieties are often filled with sugar as a sweetener.
My favorite nut milk is macadamia nut milk. It is zero carbs per serving and has 6 grams of fat per cup.
Storage information
The cookie dough for these mini snickerdoodles can be stored in the refrigerator for up to 3 days or in the freezer.
Freezing keto cookie dough is a great way to meal prep. You can make up a large batch of sugar free snickerdoodle dough. Wrap in plastic wrap and store in a freezer safe ziploc bag. The cookie dough can stay frozen for up to 4-5 months.
When you want to bake your mini keto snickerdoodles, take the cookie dough out of the freezer and let sit in the refrigerator for a several hours or on the counter to thaw out. Don’t let the dough get too soft, it should hard but able to pitch off chunks of dough when you go to bake the keto snickerdoodle cereal on a baking tray.
