What can I use instead of panko?

If you do not have panko breadcrumbs, you can crush crackers into small pieces before using them as the breading for your chicken.

Other alternative breading options include crushed cornflakes or crushed potato chips.

Recipe Tips and Notes

  • Place your chicken in a warm oven if you do not plan to serve it right away. If you are going to serve it within an hour or so, the warm oven will keep the chicken at the right temperature while keeping it crispy.
  • Squeeze a bit of lemon juice from a lemon wedge over your chicken for added flavor that goes great with Chicken Schnitzel.

FAQs

What's the difference between breaded chicken and schnitzel? ›

Chicken schnitzel is a breaded chicken filet, so if you get down to the nitty-gritty, they're the same thing. How you serve it, meaning garnishes and accompaniments, is what turns a breaded filet into a schnitzel.

How do you make schnitzel not soggy? ›

Cook schnitzels, in batches, for 4 to 5 minutes each side or until golden and cooked through. Cooking in batches helps maintain oil temperature and prevents schnitzels becoming soggy.

How do you keep chicken schnitzel from getting soggy? ›

I'll go through this in the step by step below, but after you've pounded your chicken thin, you sprinkle it with sea salt flakes on both sides and let it rest in the fridge for 20 minutes. The salt draws out unnecessary moisture from the chicken which stops the chicken from making your bread coating soggy.

What is the secret to moist chicken? ›

Pounding helps tenderize the meat by breaking down its tough fibers. It also thins it out for more even cooking. Do this before frying, grilling, or roasting for better retention of moisture content. To tenderize chicken breast, place the meat on a durable, flat surface.

Why does the breading fall off my schnitzel? ›

You Don't Start Dry

The first step to breading chicken is crucial; make sure the chicken is completely dry before starting the dredging process. Using a paper towel, pat the meat dry on all sides. Excess moisture will cause the flour to get soggy and thus will not adhere properly to the chicken.

Is it better to fry or bake breaded chicken? ›

Can I use milk instead of egg for schnitzel? ›

I've been told that a great option to avoid eggs is melted butter before rolling it in the spices or coating, but I found that you can use milk or yogurt. The trick is to ensure that your fish or chicken fillet piece is dry so the coating sticks.

What is the white stuff coming out of my chicken schnitzel? ›

The white stuff coming out of chicken as it cooks is simply extra protein that dissolves in water and is forced out of the meat by heat. Food scientist Topher McNeil, PhD, explains, “The [chicken] muscles themselves actually contract and squeeze out the liquid that's in between muscle cells.”

Why do people put lemon on schnitzel? ›

Schnitzel is not typically highly seasoned, relying instead on bold toppings such as fresh lemon wedges, mushroom sauce, or cream sauce to add a boost of flavor.

How to make chicken very soft and tender? ›

The best tenderizer though, is a salted yogurt marinade. The salt has the same effect as in a regular brine, but the lactic acid in the yogurt further tenderizes the meat. A 15-minute marinade with one cup of yogurt and one teaspoon of salt makes for the most tender chicken breasts imaginable.

Why is restaurant chicken so moist? ›

Restaurants use marinades made from a combination of acidic ingredients (such as vinegar, citrus juice, or yogurt) and flavorful herbs and spices. The acid in the marinade helps to break down the proteins in the chicken, making it more tender. Using breast or legs depending upon the dish.
